Here’s a family favorite in our home, my mom’s homemade recipe for Banana Bread. Enjoy it fresh out of the oven with a spread of your favorite butter or cream cheese. Our family loves the Kerry-gold Irish butter! My mom’s banana bread is perfect with cold milk, or a hot beverage such as tea or coffee.
Ingredients
- 1 cup sugar
- ¼ cup light butter, softened
- 1 ⅔ cups mashed ripe bananas
- ¼ cup fat free milk
- ¼ cup low fat sour cream
- 2 large egg whites
- 2 cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Preparation
Preheat the oven to 350 degrees. Combine sugar and butter in a bowl, beat with a mixer at medium speed until well blended. Add the mashed bananas, fat free milk, sour cream and egg whites, beat well. In a separate bowl, combine flour, baking soda, salt, and stir well. Add the dry ingredients to the banana mixture, beating until blended.
Spoon batter into four 5 x 2 ½ mini loaf pans coated with cooking spray. Bake for 45 minutes or until a wooden pick inserted in the center comes out clean. Cool in pans for 10 minutes on a wire rack. Remove the loaves from the pans.
To make a 9” loaf, spoon batter into a 9 x 5” loaf pan coated with cooking spray. Bake at 350 degrees for 1 hour 10 minutes or until a wooden pick inserted in the center comes out clean. Makes approximately 16 servings.
Variation of Banana Bread With Nuts and Pineapple
Ingredients
- 3 cups flour
- 1 teaspoon baking soda
- 2 cups sugar
- 1 teaspoon cinnamon
- 1 cup oil
- 2 teaspoons vanilla extract
- ½ cup walnuts
- ¾ teaspoon salt
- 3 beaten eggs
- 2 cups ripe bananas
- 1-8oz can crushed pineapple
Preparation
Combine the first 4 dry ingredients. Mix remaining ingredients in a large bowl. Add the dry ingredients and mix well. Grease and flour 2 loaf pans or 9 x 13 pan and pour the batter in. Bake 350 degrees for 50-60 minutes.
